Corrina makes an amazing caponata using eggplant as a base. This recipe was passed down for generations but updated by Corrina with ingredients that are currently available. It’s an old-world Sicilian dish consisting of chopped sautéed eggplant, olives, capers, and tomatoes. It is seasoned with olive oil, tomato sauce, and other spices.
